Frank Kelleher's side won all three of their games at the tournament with Ringmahon Rangers striker Jordan O'Regan securing the player of the tournament with seven goals in three games.
O'Regan scored four in the final day win over Leinster, including a first half hat-trick. Ciaran Kearney and Dean Swords also found the net in that win.
Leinster finished runners-up after beating hosts and holders Connacht 3-1 on the opening day and drawing 1-1 with Ulster on Day Two.
Connacht claimed third spot after beating Ulster on the final day.
